Stick it in the freezer near the back where it is coldest as and when you plan a dish. And let it stay for few hours, a minimum of two hours. Once you take it out, let it stay for few minutes in room temperature. Then just get a spoon and easily peel away.
Ginger also lasts a very long time if stored in a freezer. It is easier to grate this way as well. In case, you are in a hurry, you can also run cool tap water over it for two to three minutes and let it rest for six minutes. The skin becomes soft this way and makes it easy to peel. And, peeling with a spoon will get you more uniform result than when you use a knife or peeler.
Ginger’s thin, fragile skin and the thick rhizome is what makes it difficult to peel. When you freeze it, the skin becomes soft. Another argument is when you freeze ginger, it stays in freshest condition, firm and the skin is crisp to peel.
